6 hard-boiled eggs, separated | ||
3 tbsp. Hy-Vee light mayonnaise | ||
1 tbsp. yellow onion, finely chopped | ||
½ tsp. fresh lime juice | ||
½ tsp. Hy-Vee yellow mustard | ||
¼ tsp. Hy-Vee ground cumin | ||
4 pre-cooked medium shrimp, peeled and finely chopped | ||
Fresh cilantro, chopped, for garnish |

Directions
- Mash yolks with fork. Stir in mayonnaise, onion, lime juice, mustard and cumin until well blended. Fold in shrimp. Refill whites, using about 1 tablespoon yolk mixture for each egg half. Chill to blend flavors. Garnish with cilantro, if desired.
