Simple Carrot Cake with Cream Cheese Frosting

3 c. grated raw carrots | ||
1 (8 oz) pkg cream cheese, softened | ||
1 lbs. powdered sugar | ||
8 tbsp. margarine, softened |
Directions
- Preheat oven to 350 degrees. Spray a 13-by-9-inch baking dish with nonstick cooking spray.
- Combine sugar, flour, baking soda, cinnamon, oil and eggs. Fold in carrots. Pour into prepared pan.
- Bake for 40 to 45 minutes or until toothpick inserted in the center comes out clean. Cool before frosting.
- To make the frosting, beat together the margarine and cream cheese. Beat in sugar until light and fluffy. Spread on cooled cake.
