    1 ½ c. Hy-Vee uncooked long grain white rice
    3 c. plus 1/4 cup water, divided
    1 tsp. Hy-Vee salt
    2 tbsp. Hy-Vee canola oil
    1 large yellow onion, cut into thin strips (2 cups)
    3 clove(s) garlic, minced
    1 (12-oz.) pkg. That's Smart! frozen mixed vegetables with carrots, corn, peas & green beans
    3 c. shredded Hy-Vee Kitchen rotisserie chicken
    1 (1-oz.) pkg. Kikkoman stir-fry seasoning mix
    2 tbsp. Hy-Vee honey
    Fresh cilantro, for garnish
    Lime wedges, for serving

    Directions

    1. Cook rice according to pkg. directions using 3 cups water and salt.

    2. Meanwhile, heat oil in a large skillet over medium-high heat. Add onion and garlic; stir-fry for 2 to 3 minutes or until crisp-tender.

    3. Stir in frozen mixed vegetables; cook for 5 to 6 minutes or until cooked.

    4. Stir in chicken. Whisk together remaining 1/4 cup water, seasoning mix and honey in a small bowl; stir into mixture in skillet. Cook and gently stir for 1 to 2 minutes or until sauce slightly thickens and mixture is heated through.

    5. Serve mixture over cooked rice. Garnish with cilantro, if desired. Serve with lime wedges.
