Simple Sweet Potato Pie

1 (9 oz) Hy-Vee frozen pie crust, baked according to package directions and cooled completely | ||
1 lbs. sweet potatoes | ||
¾ c. Hy-Vee granulated sugar | ||
½ c. whipping cream | ||
2 Hy-Vee large eggs | ||
1 tsp. Hy-Vee vanilla extract | ||
1 tsp. pumpkin pie spice | ||
1 c. Hy-Vee miniature marshmallows | ||
½ c. Hy-Vee pecan pieces |
Directions
- Preheat oven to 375 degrees.
- Roast sweet potato on a baking sheet, about 45 minutes. Cool completely.
- Reduce oven temperature to 325 degrees.
- Scoop 1 cup of sweet potato pulp into blender. Add sugar, whipping cream, eggs, vanilla and pumpkin pie spice. Blend until smooth.
- Place marshmallows and pecan pieces on crust. Pour sweet potato mixture over top.
- Bake for 35 minutes until filling is set.
- Cool completely on cooling rack.
