½ c. chopped onion | ||
¾ c. chopped parsley | ||
1 c. Hy-Vee reduced-sodium chicken broth | ||
6 medium potatoes, thinly sliced | ||
Hy-Vee salt and Hy-Vee pepper, to taste |
Directions
- Heat oil in a large skillet over medium-high heat. Add onion and sauté until tender, about 3 to 5 minutes. Remove from heat.
- Stir in parsley and broth. Layer sliced potatoes on top of onion mixture; return to heat and bring to a boil.
- Reduce heat, cover and simmer for 20 minutes, or until potatoes are tender. Season with salt and pepper, if desired.
