Sloppy Joe Meatballs

1 Hy-Vee large egg, beaten | ||
¼ c. Hy-Vee plain bread crumbs | ||
1 tbsp. plus 1 tsp That's Smart chopped onion, divided | ||
¼ tsp. Hy-Vee dried oregano | ||
1 lbs. lean ground beef, uncooked | ||
1 tbsp. Hy-Vee vegetable oil | ||
½ c. chopped green bell pepper | ||
1 (15.5 oz) can Hy-Vee sloppy joe sauce |
Directions
- Heat oven to 350 degrees.
- In a large bowl, combine egg, bread crumbs, 1 teaspoon dried onion and oregano. Add the ground beef and mix well. Shape into 30 meatballs. Arrange in a single layer in a 9-by-13-inch baking pan. Bake for 15 to 20 minutes or until ground beef is no longer pink.
- Meanwhile, in a medium saucepan, heat oil over medium heat. Add bell pepper and 1 tablespoon dried onion. Cook until vegetables are tender. Stir in sloppy joe sauce. Simmer, uncovered for 10 minutes stirring occasionally.
- Add cooked meatballs to sloppy joe sauce, stir gently to coat.
- Serve immediately.
