Juicy grilled brats with fresh veggies and halloumi cheese is a tasty summertime or tailgate meal-on-a stick. Halloumi, also known as squeaky cheese, because its elastic texture “squeaks” as it is chewed. Best yet, this unique cheese won’t melt when it is grilled.

Directions
Meanwhile, poke bratwursts several times with the point of a small sharp knife. Combine 4 cups water, beer and bratwurst in a large saucepan; bring to a boil over medium heat. Reduce heat to medium-low; simmer for 7 to 8 minutes or until bratwursts reach 165 degrees. Transfer bratwurst to a cutting board. Let stand for 5 minutes.
Spray a large wire-mesh grilling basket or grilling screen with cooking spray; set aside. Preheat pellet smoker according to manufacturer's directions to maintain a temperature of 225 degrees to 230 degrees. Use wood pellets and water pan as directed.
Diagonally cut each bratwurst into 5 pieces. Alternately thread bratwurst pieces, yellow and red peppers, onion and halloumi on 6 (12-in.) metal skewers.
Place skewers in grilling basket or on grilling screen; place on rack in smoker. Close smoker; smoke for 1 hour; brush all sides with ¼ cup BBQ sauce. Rotate grilled basket or screen on smoker rack. Close smoker; smoke for 30 to 45 minutes more or until desired smoke flavor and vegetables are lightly charred. Serve with additional BBQ sauce, if desired.
