- Mesh strainer
- Medium bowl
- 4 10-ounce mason jars
Directions
Lightly spray the cut sides of the lemons with cooking spray. Place cut-side-down and grill for 10 to 12 minutes or until charred and very soft. Remove from grill, let stand for 10 minutes.
Place mesh strainer over a medium bowl and with the tines of a fork, extract lemon juice into bowl, discarding seeds and lemons.
Place granulated sugar in shallow dish and ¼ cup honey in another dish. Dip rim of 10-ounce mason jar in honey and immediately dip into sugar; fill glass with ice. Add ¼ cup smoked lemon juice, 1 tablespoon honey, 1/8 teaspoon lemongrass paste, 1/8 teaspoon ginger paste, and a ½ cup cold water. Stir until combined.
Garnish with whole basil leaves and sliced lemon grass, if desired.
