Smoked Gouda Quesadillas with Berry Salsa

1 ½ c. shredded smoked Gouda | ||
½ jalapeño pepper, seeded and minced* | ||
2 tbsp. finely chopped sweet onion | ||
2 tbsp. chopped fresh cilantro | ||
4 (8-inch) Hy-Vee flour tortillas | ||
1/4 to 1/2 cup raspberry or peach salsa | ||
Fresh cilantro sprigs |
Directions
- In a large bowl combine Gouda, jalapeño, onion and cilantro. Season with salt and pepper to taste. Sprinkle over 2 tortillas, cover with remaining 2 tortillas, and press down lightly.
- Coat a large skillet or griddle with nonstick cooking spray; heat over medium heat. Cook each quesadilla 2 to 3 minutes per side or until cheese melts and tortillas are golden brown. Remove from skillet and cut into wedges. Top with cilantro and serve with salsa.
- *Use caution when handling hot peppers. Wear disposable gloves or wash hands in hot, soapy water afterward.
