Soft Ginger Cookies with Molasses

1 ½ c. Hy-Vee butter flavor vegetable shortening | ||
2 c. plus 1/2 c. Hy-Vee granulated sugar, divided | ||
2 Hy-Vee large eggs | ||
2 tbsp. Hy-Vee vanilla | ||
½ c. mild molasses | ||
4 c. Hy-Vee flour | ||
4 tsp. Hy-Vee baking soda | ||
1 tsp. Hy-Vee salt | ||
1 tsp. Hy-Vee nutmeg | ||
1 tsp. Hy-Vee ginger | ||
1 (8 oz) bag English toffee bits |
Directions
- Preheat oven to 350 degrees.
- Cream shortening and 2 cups granulated sugar. Add eggs, vanilla and molasses; mix well.
- Sift together flour, baking soda, salt, nutmeg and ginger. Gradually add to butter mixture and beat until combined.
- Stir in toffee bits.
- Shape dough into 1-1/2-inch balls and roll in remaining 1/2 cup sugar.
- Place cookies 2-inches apart on ungreased baking sheet. Flatten slightly. Bake 8 to 10 minutes or until golden. Remove cookies from baking sheet to cool completely on wire rack.
