    2 lbs. russet potatoes, diced
    ¼ c. water
    ¼ c. Hy-Vee butter
    1 tbsp. Hy-Vee parsley
    1 tsp. Hy-Vee dill weed
    Hy-Vee salt and Hy-Vee pepper, to taste
    ¼ c. light sour cream

    Directions

    1. Place potatoes, water and butter into a 2-quart slow cooker. Sprinkle with parsley, dill weed, salt and pepper. Cover. Cook on LOW for 7 hours or HIGH for 4 hours.
    2. Mash potatoes with a masher or electric beater. Stir in sour cream before serving.
