    1 ½ c. soy milk
    3 tbsp. cornstarch
    ¼ tsp. vanilla
    ¼ c. maple syrup
    ¼ c. cocoa powder or non-dairy carob powder
    2 bananas, sliced, optional

    Directions

    1. Whisk soy milk, cornstarch, vanilla, maple syrup and cocoa (or carob) powder together in a saucepan.
    2. Cook over medium heat, stirring constantly, until pudding thickens.
    3. Remove pan from heat. Stir in sliced bananas, if desired.
    4. Chill for at least 15 minutes before serving.
