1 c. brown sugar | ||
¼ c. soy oil | ||
1 (2.5 oz) jar prune baby food or 1/4 c. pureed prunes | ||
2 egg whites | ||
½ c. applesauce or mashed cooked pumpkin | ||
1 tsp. vanilla | ||
1 c. cooked soybeans, rinsed, drained and mashed | ||
2 c. flour (may use all or part whole wheat) | ||
2 tsp. baking powder | ||
1 tsp. cinnamon | ||
½ tsp. nutmeg | ||
¼ tsp. cloves | ||
¼ tsp. ginger | ||
1 c. oats | ||
1 c. raisins |
Directions
- Combine brown sugar, oil, prunes, egg whites, applesauce and vanilla in a large mixing bowl. Beat together well with electric mixer. Beat in mashed soybeans.
- Preheat oven to 375 degrees.
- In medium mixing bowl, sift together flour, baking powder, cinnamon, nutmeg, cloves and ginger. Stir into soybean mixture.
- Stir oats and raisins into dough.
- Drop dough by rounded teaspoonfuls onto a nonstick or lightly greased baking sheet. Bake at 375 degrees for 10 minutes, until firm and lightly golden.
- To make Pumpkin Spice Cookies, substitute mashed cooked pumpkin for the 1/2 cup applesauce.
