Spiced Mashed Sweet Potatoes

½ c. Hy-Vee orange juice | ||

Directions
- Preheat oven to 400°F. Bake sweet potatoes 45 to 55 minutes or until tender.
- Cut potatoes in half and scoop the pulp into a mixing bowl; discard peels. Add orange juice, nutmeg, allspice and 2 tablespoons butter; beat until fluffy. Season to taste with salt and pepper.
- Lightly coat a 1-quart baking dish with nonstick cooking spray. Spoon potatoes into baking dish. Drizzle molasses over potatoes and dot with 1 teaspoon butter.
- Bake, uncovered, 15 to 20 minutes or until heated through. Serve hot.
