3 c. sliced Bartlett pears | ||
1 c. fresh cranberries | ||
1 large Hy-Vee egg | ||
¾ c. packed Hy-Vee brown sugar | ||
¼ c. Hy-Vee skim milk | ||
1 c. Hy-Vee flour | ||
1 tsp. Hy-Vee baking powder | ||
½ tsp. Hy-Vee salt | ||
2 tsp. apple pie spice | ||
½ tsp. almond extract | ||
2 tbsp. Hy-Vee butter, melted | ||
Hy-Vee vanilla ice cream, optional |
Directions
- Preheat oven to 350 degrees. Layer pears and cranberries in a greased 2-quart baking dish.
- Stir together egg, brown sugar and milk. In a separate bowl, stir together flour, baking powder, salt and apple pie spice. Stir into egg mixture. Stir in almond extract and butter. Pour mixture over fruit.
- Bake 30 minutes. Cobbler should be bubbly and lightly browned. Serve warm with vanilla ice cream if desired.
