    Reminiscent of Hoppin’ John, this black-eyed pea soup has all of the spicy goodness of the classic Southern dish, but with a soup twist. Serve with cornbread for a warm, cozy dinner.

    1 (8-oz.) pkg. Hy-Vee diced cooked ham, drained
    1 (7.6-oz.) container Hy-Vee Short Cuts diced onion, celery, carrot blend
    1 (10-oz.) can Hy-Vee diced tomatoes & green chilies, undrained
    1 tsp. smoked paprika, plus additional for garnish
    ½ tsp. Slap Ya Mama Cajun seasoning
    1 (32-oz.) container Hy-Vee 33% less sodium chicken broth
    2 (15-oz.) cans no salt added black-eyed peas, drained and rinsed
    ½ (8.8-oz.) pkg. Gustare Vita ricotta, cheese & spinach tortellini
    2 c. lightly packed baby spinach, plus additional for garnish

    Directions

    1. Heat oil in a 6-qt. Dutch oven. Add ham and onion, celery and carrot blend. Cook over medium-high heat for 4 to 6 minutes or until ham begins to brown and vegetables are tender, stirring occasionally. Add tomatoes and green chilies, 1 tsp. smoked paprika and Cajun seasoning; cook for 2 to 3 minutes or until heated through.

    2. Add broth, black-eyed peas and tortellini to tomato mixture. Bring to simmer over medium heat. Simmer for 4 to 6 minutes or until pasta is al dente. Add 2 cup spinach; simmer for 2 to 3 minutes more or until spinach just beings to wilt.

    3. To serve, garnish with additional smoked paprika and spinach, if desired.
