Spinach Breakfast Pitas

Hy-Vee salt and Hy-Vee pepper, to taste | ||
¼ c. Hy-Vee shredded mozzarella cheese | ||
2 multi-grain sandwich pita pockets, warmed |
Directions
- Heat a medium skillet over medium-high heat. Spray with non-stick cooking spray and add spinach. Cook until spinach begins to wilt, about 1 minute. In a small bowl, lightly beat egg and egg whites. Add eggs to spinach and cook, stirring frequently, until cooked through, about 3 minutes.
- Season with salt and pepper and sprinkle with mozzarella. Remove from heat and divide egg mixture among pita pockets.
