    1 c. fresh spinach
    1 Hy-Vee large egg
    3 egg whites
    Hy-Vee salt and Hy-Vee pepper, to taste
    ¼ c. Hy-Vee shredded mozzarella cheese
    2 multi-grain sandwich pita pockets, warmed

    Directions

    1. Heat a medium skillet over medium-high heat. Spray with non-stick cooking spray and add spinach. Cook until spinach begins to wilt, about 1 minute. In a small bowl, lightly beat egg and egg whites. Add eggs to spinach and cook, stirring frequently, until cooked through, about 3 minutes.
    2. Season with salt and pepper and sprinkle with mozzarella. Remove from heat and divide egg mixture among pita pockets.
