1 (10 oz) pkg frozen spinach | ||
1 ½ c. chopped onion | ||
3 clove(s) garlic, chopped | ||
2 tbsp. oil | ||
3 c. crumbled tofu (soft or silken tofu is best) | ||
1 tbsp. lemon juice | ||
salt and pepper, to taste | ||
1 unbaked prepared pie crust |
Directions
- Preheat oven to 350 degrees.
- Saute onion and garlic in the oil in a large saucepan over medium heat for 3 minutes.
- Cook spinach according to package directions.
- Add cooked spinach, tofu, lemon juice, salt and pepper. Cook, stirring frequently, for 5 minutes longer. Pour into pie crust.
- Bake at 350 degrees for 15 to 20 minutes, until crust is brown.
