1 (10 oz) pkg frozen spinach
1 ½ c. chopped onion
3 clove(s) garlic, chopped
2 tbsp. oil
3 c. crumbled tofu (soft or silken tofu is best)
1 tbsp. lemon juice
salt and pepper, to taste
1 unbaked prepared pie crust

Directions

  1. Preheat oven to 350 degrees.
  2. Saute onion and garlic in the oil in a large saucepan over medium heat for 3 minutes.
  3. Cook spinach according to package directions.
  4. Add cooked spinach, tofu, lemon juice, salt and pepper. Cook, stirring frequently, for 5 minutes longer. Pour into pie crust.
  5. Bake at 350 degrees for 15 to 20 minutes, until crust is brown.
