Spinach Salad with Sweet Blackberry Vinaigrette

2 tbsp. Hy-Vee Select balsamic vinegar | ||
2 tbsp. Hy-Vee honey | ||
2 tbsp. Hy-Vee Select olive oil | ||
¼ tsp. Hy-Vee vanilla | ||
¼ tsp. Hy-Vee salt | ||
1 (9 oz) bag fresh spinach | ||
½ c. crumbled Gorgonzola cheese | ||
⅓ c. sliced red onion | ||
⅓ c. purchased glazed walnuts |
Directions
- In a blender combine blackberries, vinegar, honey, oil, vanilla and salt. Pulse to desired consistency.
- In a large bowl, toss spinach, cheese, red onion and blackberry mixture.
- Stir in walnuts before serving.
