    5 tbsp. fresh cilantro, chopped and divided
    2 tbsp. Cojita cheese, crumbled
    ¼ tsp. smoked paprika
    2 ripe avocados, peeled and pitted
    ¼ c. red onion, finely chopped
    2 tbsp. fresh lime juice
    1 tbsp. jalapeño pepper, seeded and finely chopped
    ½ tsp. garlic salt
    ⅛ tsp. Hy-Vee ground black pepper

    Directions

    1. Stir together corn, 1 tablespoon cilantro, Cojita cheese, and smoked paprika in a small bowl; set aside.

    2. Mash avocados, onion, remaining 4 tablespoons cilantro, lime juice, jalapeño, garlic salt, and black pepper in a bowl with a fork until combined. Top with corn mixture. Garnish with cilantro.
