    1 (4 serving) pkg sugar-free instant banana pudding mix
    2 c. skim milk
    2 c. cold cooked rice
    1 c. (1 medium) diced banana
    1 ½ c. fresh raspberries
    6 tbsp. Cool Whip Lite, thawed

    Directions

    1. In a medium bowl, whisk together pudding mix and skim milk.
    2. Stir in rice. Gently fold in banana and raspberries.
    3. Evenly spoon mixture into 6 dessert dishes. Top each with 1 tablespoon Cool Whip Lite. Refrigerate for at least 20 minutes.
