3 oz. baby arugula (about 3 cups) | ||
¼ c. jarred pickled red onions, drained | ||
2 tbsp. pickled red onions brine |

- 6 (12-inch) skewers

Directions
Brush corn with 1 Tbsp. olive oil. Grill corn for 12 to 15 minutes or until tender and slightly charred, turning occasionally. Remove from grill; cool slightly. Cut corn kernels from cobs in large shards. Place in a large bowl; set aside.
Meanwhile, cook gnocchi according to pkg. directions. Drain and rinse with cold water. Pat gnocchi dry with paper towel and place in large bowl.
Add tomatoes, 1 Tbsp. oil and 2 tsp. dressing mix to gnocchi in bowl; toss to coat. Alternately thread a few gnocchi with each tomato onto 6 (12-in.) skewers. Brush skewers with 1 Tbsp. oil.
Grill skewers for 4 to 6 minutes or until the gnocchi are golden and slightly crisp and tomatoes are slightly charred, turning occasionally. Remove from grill; set aside.
Add arugula, pickled onions and brine, remaining 1 Tbsp. oil and remaining 2 tsp. dressing mix to corn in large bowl; toss to combine.
To serve, transfer arugula mixture to a large serving platter; top with skewers. Serve immediately.
