Summer Shrimp and Orzo Salad

1 peeled and deveined shrimp, grilled | ||
8 oz. orzo pasta, cooked | ||
1 yellow bell pepper, sliced | ||
1 c. cherry tomatoes, halved lengthwise | ||
3 green onions, sliced | ||
3 tbsp. finely chopped basil | ||
¼ c. Hy-Vee Select garlic flavored olive oil | ||
1 tbsp. freshly squeezed lemon juice | ||
Salt and black pepper to taste |
Directions
- Combine shrimp, orzo, bell pepper, tomatoes, green onions and basil in a serving bowl.
- Whisk together oil and lemon juice. Toss evenly to coat salad mixture. Season to taste with salt and pepper.
- Salad may be served hot or cold.
