Summertime Rice Pudding

1 tsp. cinnamon | ||
2 c. skim milk | ||
1 packet(s) sugar-free regular vanilla pudding, prepared according to package directions | ||
1 (8 oz) container lite or fat-free whipped topping, thawed | ||
2 c. fresh fruit |
Directions
- Combine water and rice in a microwave-safe bowl. Cover dish and microwave for 8 minutes, stirring once.
- Add raisins, cinnamon, skim milk and prepared vanilla pudding. Return to the microwave and cook until thickened. Cool.
- Add whipped topping and fresh fruit.
- Refrigerate until serving time.
