½ red bell pepper, diced | ||
½ yellow bell pepper, diced | ||
½ jalapeño, minced | ||
¼ c. chopped cilantro leaves | ||
2 tbsp. lime juice | ||
¼ tsp. salt | ||
¼ tsp. pepper | ||
Lime wedge, for garnish |
Directions
- Combine tomatoes, onion, bell peppers, and jalapeño in a bowl. Mix in cilantro.
- Serve salsa with your favorite corn chips and a lime wedge, if desired.
- Stir in lime juice, salt and pepper until evenly incorporated, adding more to taste if desired.
- Salsa can be made up to 24 hours ahead and refrigerated until ready to eat.
