Sunkist Fresh Pummelo and Avocado Salsa

½ c. Sunkist diced fresh pummelo* segments | ||
1 c. diced ripe-but-firm avocado | ||
1 c. diced ripe-but-firm avocado | ||
½ c. small-diced red bell pepper | ||
¼ c. chopped green onion | ||
¼ c. chopped cilantro, optional | ||
sea salt | ||
Freshly ground black pepper, to taste |
Directions
- Combine pummelo, avocado, red bell pepper, green onion and cilantro. Toss gently to blend thoroughly.
- Season with just a pinch of salt and black pepper. Cover and refrigerate until ready to serve.
- Serving suggestions: Excellent served with tortilla wedges or on top of grilled or baked seafood.
- Tip: The addition of cilantro improves this salsa!
- * Sunkist grapefruit may be substituted when pummelos are not in season.
