Sweet and Sour Zucchini

¼ c. Hy-Vee Select balsamic vinegar | ||
2 tsp. Hy-Vee Select olive oil | ||
2 tbsp. Hy-Vee granulated sugar | ||

2 large yellow zucchini squash, cut lengthwise into 1/2-inch slices | ||
2 large green zucchini squash, cut lengthwise into 1/2-inch slices |
Directions
- In a small bowl, whisk together vinegar, oil, sugar and water.
- In a 2-gallon resealable plastic bag, combine vinegar mixture and zucchini slices. Seal bag. Refrigerate for 12 to 24 hours. Turn over two or three times while marinating.
- Remove zucchini from marinade. Discard marinade.
- Heat coals or gas grill for indirect heat. Grill zucchini 4 to 5 inches from medium heat, 5 to 6 minutes or until tender.
