Sweet Bean-Corn Salsa

½ c. frozen edamame | ||
2 tbsp. water | ||
2 plum tomatoes, cut into 1/4-inch cubes | ||
½ c. frozen shoepeg corn, thawed | ||
1 medium scallion, coarsely chopped | ||
1 tbsp. lime juice | ||
1 tbsp. coarsely chopped cilantro | ||
2 tsp. minced jalapeno pepper | ||
½ tsp. minced garlic | ||
Toasted pita bread, crackers or tortilla chips, optional |
Directions
- In a small microwave-safe bowl, combine edamame and water.
- Cover and microwave on HIGH for 6 to 8 minutes or until crisp-tender. Drain.
- In a small bowl, combine edamame, tomatoes, corn, scallion, lime juice, cilantro, jalapeno pepper and garlic.
- Cover and refrigerate 1 hour before serving.
- Serve with toasted pita bread, crackers or tortilla chips if desired.
