Sweet Potato Bake

2 large sweet potatoes, peeled, cubed | ||
3 Hy-Vee organic eggs, beaten | ||
¼ c. plus 2 tbsp Organic Valley butter, melted, divided | ||
⅔ c. Hy-Vee vanilla soymilk | ||
¾ c. packed brown sugar, divided | ||
¾ c. chopped pecans | ||
½ c. flake coconut | ||
¼ c. flour | ||
1 ½ tsp. pumpkin pie spice |
Directions
- Preheat oven to 350 degrees. Boil sweet potatoes about 25 minutes or until tender. Drain well and mash.
- Stir in eggs, 1/4 cup butter, soymilk and 1/4 cup brown sugar. Pour into a greased 2-quart baking dish.
- Stir together remaining ingredients, including remaining butter. Sprinkle evenly over sweet potatoes. Bake uncovered for 40 minutes or until center is set.
