3 c. cooked and mashed sweet potatoes | ||
1 tbsp. Blue Bonnet margarine | ||
⅔ c. packed Hy-Vee brown sugar | ||
1 tsp. maple extract | ||
2 tbsp. Hy-Vee flour | ||
¼ tsp. Tones pumpkin pie spice | ||
½ tsp. Hy-Vee salt | ||
1 Hy-Vee large egg | ||
3 c. crushed Hy-Vee corn flakes | ||
Hy-Vee pancake syrup, optional |
Directions
- Preheat oven to 325 degrees. Stir together all ingredients except for corn flakes. Form the mixture into bite-size balls. Roll in crushed corn flakes.
- Place sweet potato balls on a greased baking sheet. Bake about 20 minutes.
- Serve with Hy-Vee pancake syrup if desired.
