Sweet Potatoes with Peas

4 medium sweet potatoes (about 2 pounds), peeled and cubed | ||
3 tbsp. Hy-Vee butter | ||
1 tbsp. packed Hy-Vee brown sugar | ||
¼ c. fresh or frozen thawed peas | ||
Hy-Vee salt and Hy-Vee black pepper, to taste |
Directions
- In a large pot, cook sweet potatoes in boiling salted water for 10 minutes or until tender; drain. Return sweet potatoes to the pot. Cook for 1 minute to remove excess moisture.
- Stir in butter and brown sugar until butter melts. Mash potatoes with a potato masher or beat with an electric mixer on LOW just until light and fluffy. Stir in peas. Season to taste with salt and pepper.
