Tantalizing Tortellini Salad

2 ½ c. frozen Hy-Vee Select tri-color cheese tortellini | ||
¼ c. crumbled feta cheese | ||
1 c. cherry tomatoes | ||
1 (2.25 oz) can Hy-Vee sliced ripe olives, drained | ||
½ c. diced yellow bell pepper | ||
½ c. Hy-Vee Italian salad dressing | ||
4 c. fresh spinach leaves, divided |
Directions
- Prepare tortellini according to package directions. Rinse under cold water.
- In a medium bowl, combine feta, tomatoes, olives, bell pepper and salad dressing. Add tortellini and gently stir to coat.
- Divide spinach equally among 4 salad bowls and top with equal portions of the tortellini mixture.
- Serve immediately.
