Directions
- Place chicken pieces in a plastic food storage bag or a large glass baking dish.
- Combine honey, soy sauce, sherry (or water), ginger and garlic in a small bowl. Pour over chicken, turning pieces to coat. Close plastic bag or cover dish with plastic wrap.
- Marinate in the refrigerator for at least 6 hours, turning chicken 2 or 3 times.
- Remove chicken from marinade, reserving marinade.
- Arrange chicken on a rack over a foil-coated broiler pan. Cover chicken with foil.
- Bake at 350 degrees for 30 minutes.
- Meanwhile, place reserved marinade in a saucepan. Bring marinade to a boil and boil for 3 minutes.
- Uncover chicken and brush with marinade. Continue to bake uncovered for 30 to 45 more minutes or until done, brushing chicken occasionally with marinade.
