    ½ c. onion, chopped

    2 tsp. ground cumin
    1 tsp. That’s Smart! garlic powder
    1 (32-oz) pkg. That’s Smart! chicken broth
    1 (15.5-oz) can That’s Smart! diced tomatoes
    1 (15.5-oz.) jarThat’s Smart! mild salsa, or medium salsa
    1 (15.5-oz.) can That’s Smart! light red kidney beans
    2 c. chicken, cooked and shredded
    2 c. That’s Smart! frozen corn kernels
    1 tbsp. fresh lime juice
    Salt, to taste
    Pepper, to taste
    Tortilla chips, crushed, for serving
    Avocado, sliced, for serving
    Fresh cilantro, chopped, for serving

    Directions

    1. In a large pot, heat vegetable oil. Add onion, chili powder, ground cumin, garlic powder, and cook 5 minutes.

    2. Add chicken broth, diced tomatoes, mild or medium salsa, light red kidney beans, and shredded cooked chicken. Simmer 15 minutes, stirring often.

    3. Add corn kernels, lime juice, salt and pepper to taste. To serve, top soup with crushed tortilla chips, sliced avocado, and chopped cilantro if desired.
