Meanwhile, place chicken breast strips on a large baking sheet. Cook 11 to 13 minutes or until crispy and cooked through (165 degrees). Remove from oven; cut into bite-size pieces and set aside.
Heat canola oil in a large skillet over medium-high heat. Add onions and garlic, stir fry 2 to 3 minutes or until crisp-tender. Add frozen vegetables. Cook and stir 5 minutes or until cooked through. Add cooked chicken to skillet In a small bowl, whisk together stir-fry seasoning mix, remaining 1/4 cup water, and honey. Pour over mixture in skillet. Continue cooking and stirring 2 more minutes or until well coated.
Serve stir-fry over hot cooked white rice. If desired, garnish with fresh cilantro and serve with lime wedges.
