Tilapia with Sweet Green Onion Dressing

2 tbsp. chopped green onion | ||
⅓ c. Newmans Own low fat sesame ginger dressing | ||
Juice of 1 lemon | ||
4 (6 oz each) tilapia fillets | ||
½ tsp. Hy-Vee salt | ||
¼ tsp. Hy-Vee black pepper | ||
4 c. Popeye spinach, divided |
Directions
- In a small bowl, combine green onion, dressing and lemon juice. Set aside.
- Preheat broiler. Place tilapia fillets on a greased baking sheet. Sprinkle evenly with salt and pepper.
- Broil 6 to 8 inches from heat for 3 minutes. Flip fillets and broil an additional 3 to 4 minutes or until fish flakes easily with a fork.
- Arrange 1 cup spinach on each of 4 plates. Top each with 1 fillet; drizzle with 2 tablespoons of dressing mixture.
