    2 tbsp. chopped green onion
    ⅓ c. Newmans Own low fat sesame ginger dressing
    Juice of 1 lemon
    4 (6 oz each) tilapia fillets
    ½ tsp. Hy-Vee salt
    ¼ tsp. Hy-Vee black pepper
    4 c. Popeye spinach, divided

    Directions

    1. In a small bowl, combine green onion, dressing and lemon juice. Set aside.
    2. Preheat broiler. Place tilapia fillets on a greased baking sheet. Sprinkle evenly with salt and pepper.
    3. Broil 6 to 8 inches from heat for 3 minutes. Flip fillets and broil an additional 3 to 4 minutes or until fish flakes easily with a fork.
    4. Arrange 1 cup spinach on each of 4 plates. Top each with 1 fillet; drizzle with 2 tablespoons of dressing mixture.
