2 ripe tomatoes, chopped
avocado, chopped
1 cucumber, chopped
20 Hy-Vee large ripe olives
3 basil leaves, chopped
1 tbsp. Hy-Vee Select olive oil
1 ½ tbsp. Hy-Vee Select balsamic vinegar
Hy-Vee sea salt, to taste
freshly cracked Hy-Vee black pepper, to taste

Directions

  1. In a large bowl, combine tomatoes, avocado, cucumber, olives and basil.
  2. In a small bowl, whisk oil and vinegar.
  3. Divide tomato mixture evenly among 8 plates. Drizzle each evenly with prepared vinaigrette; season to taste with salt and black pepper.
