Tomato Corn Salsa

2 medium fresh tomatoes (3/4 pound), seeded and diced | ||
1 c. Hy-Vee Select white shoepeg corn kernels | ||
½ c. diced green pepper | ||
⅓ c. diced red onion | ||
2 ½ tbsp. Hy-Vee Select white wine vinegar | ||
2 tbsp. sugar | ||
1 tbsp. Dijon-style mustard | ||
¼ tsp. red pepper flakes | ||
⅛ tsp. salt |
Directions
- In a medium bowl, combine tomatoes, white corn, green pepper and red onion.
- In a small bowl, combine white wine vinegar, sugar, Dijon mustard, red pepper flakes and salt.
- Pour vinegar mixture over vegetables. Toss to coat.
- Serve chilled with tortilla chips, or on hamburgers and hot dogs.
