Tomato-Herb Bruschetta

Description
Spread toasted bruschetta with smoked Gouda or goat cheese spread and top with assorted heirloom tomatoes. Garnish with fresh thyme or chopped rosemary.

6 (1/2-inch thick) slices Hy-Vee Bakery Artisan French Boule bread, halved | ||
2 tbsp. Hy-Vee Select olive oil | ||
½ c. goat cheese spread | ||
4 oz. assorted heirloom tomatoes, cut into slices | ||
1 tbsp. chopped fresh thyme or rosemary |
Directions
- Preheat oven to 400 degrees.
- Arrange bread slices in a single layer on an ungreased baking sheet. Lightly brush one side of each bread slice with oil.
- Bake for 4 minutes. Turn slices over and bake for 3 to 4 minutes more or until crisp and light brown.
- Just before serving, spread toasted bread with cheese spread. Top with tomato slices and sprinkle with thyme or rosemary.
