    Spread toasted bruschetta with smoked Gouda or goat cheese spread and top with assorted heirloom tomatoes. Garnish with fresh thyme or chopped rosemary.

    6 (1/2-inch thick) slices Hy-Vee Bakery Artisan French Boule bread, halved
    2 tbsp. Hy-Vee Select olive oil
    ½ c. goat cheese spread
    4 oz. assorted heirloom tomatoes, cut into slices
    1 tbsp. chopped fresh thyme or rosemary

    Directions

    1. Preheat oven to 400 degrees.
    2. Arrange bread slices in a single layer on an ungreased baking sheet. Lightly brush one side of each bread slice with oil.
    3. Bake for 4 minutes. Turn slices over and bake for 3 to 4 minutes more or until crisp and light brown.
    4. Just before serving, spread toasted bread with cheese spread. Top with tomato slices and sprinkle with thyme or rosemary.
