Tomato Hors d'Oeuvres

2 Roma tomatoes or tomato of your choice | ||
1 small or 1/2 large lemon | ||
2 to 4 tbsp virgin coconut oil | ||
Parsley, to taste | ||
1 tbsp. chopped fresh oregano | ||
Cilantro, to taste | ||
Basil, to taste | ||
Salt, to taste | ||
Alfalfa sprouts, for garnish |
Directions
- Slice tomatoes and distribute on a plate.
- To make pesto topping, squeeze lemon juice into a container, suitable for blending. Add coconut oil, parsley, oregano, cilantro, basil and salt to container and hand-blend all ingredients. Taste and make adjustments to flavor.
- Scoop out about 1 spoonful of pesto for each person and evenly distribute on top of all tomatoes. Add a small handful of alfalfa sprouts on top of pesto on all tomatoes.
