½ c. Hy-Vee unsalted butter, at room temperature | ||
½ c. firmly packed Hy-Vee light brown sugar | ||
1 tsp. Hy-Vee vanilla extract | ||
1 ½ c. Hy-Vee old-fashioned oats | ||
½ c. plus 2 tbsp white whole wheat flour | ||
½ tsp. Hy-Vee baking soda | ||
¼ tsp. kosher salt | ||
½ c. Hy-Vee flaked coconut | ||
1 c. dark chocolate chips | ||
1 (2 oz) package Hy-Vee slivered almonds | ||
½ c. Hy-Vee dried cranberries |
Directions
- In a small bowl, mix together flaxseed and water; set aside.
- Beat butter and brown sugar until light and fluffy. Beat in flaxseed mixture and vanilla. Whisk together oats, flour, baking soda and salt; stir into mixture. Fold in coconut, chocolate chips, almonds and cranberries.
- Form into 1 inch balls. Place 2 inches apart on ungreased baking sheets and flatten slightly. Bake at 375 degrees for 10 minutes or until golden brown. Allow to cool on baking sheet for 2 minutes before removing to wire rack.
