2 mangoes, peeled and diced | ||
1 c. fresh sliced strawberries | ||
2 (6 oz each) Hy-Vee nonfat key lime pie yogurt, divided | ||
½ c. Hy-Vee flake coconut, toasted | ||
¼ c. Hy-Vee sliced almonds, toasted |
Directions
- In a medium bowl, stir together pineapple, mangoes and strawberries.
- In separate bowl, mix together coconut and almonds.
- In 6 parfait glasses, alternate layers of fruit, yogurt and coconut/almond mixture.
- *To toast coconut and almonds, layer coconut and almonds on shallow baking sheet. Toast at 350 degrees for 4 to 6 minutes until lightly browned, stirring frequently.
