    2 c. fresh pineapple chunks
    2 mangoes, peeled and diced
    1 c. fresh sliced strawberries
    2 (6 oz each) Hy-Vee nonfat key lime pie yogurt, divided
    ½ c. Hy-Vee flake coconut, toasted
    ¼ c. Hy-Vee sliced almonds, toasted

    Directions

    1. In a medium bowl, stir together pineapple, mangoes and strawberries.
    2. In separate bowl, mix together coconut and almonds.
    3. In 6 parfait glasses, alternate layers of fruit, yogurt and coconut/almond mixture.
    4. *To toast coconut and almonds, layer coconut and almonds on shallow baking sheet. Toast at 350 degrees for 4 to 6 minutes until lightly browned, stirring frequently.
