1 (15 oz) can Hy-Vee peaches in juice, drained and diced | ||
1 (14.5 oz) can Hy-Vee no-salt-added diced tomatoes, drained | ||
Juice of 1 lime | ||
1 small red bell pepper, seeded and diced | ||
¼ medium red onion, finely diced | ||
1 (12.5 oz) can Hy-Vee chunk chicken breast | ||
Salt and pepper, to taste | ||
2 c. Hy-Vee spring salad mix, divided | ||
4 Hy-Vee corn tortillas | ||
¼ c. finely chopped cilantro, divided |
Directions
- In a bowl, combine peaches, tomatoes, lime juice, bell pepper and red onion.
- In a separate bowl, season chicken breast with salt and pepper to taste.
- To assemble, place 1/2 cup of the spring mix on a tortilla and top with 1/4 of the chicken. Add 1/4 of the vegetable mixture and sprinkle with 1 tablespoon of chopped cilantro.
- Repeat with each remaining tortilla. Serve immediately.
