Turkey Barley Soup

1 (1.2 pound) pkg ground turkey | ||
½ c. finely chopped onion | ||
½ c. finely chopped carrot | ||
2 (32 oz each) containers Hy-Vee reduced-sodium chicken broth | ||
½ c. medium pearl barley | ||
1 tbsp. Mrs. Dash original seasoning | ||
1 (10 oz) pkg Hy-Vee frozen chopped spinach, thawed and drained | ||
Hy-Vee shredded Parmesan cheese, optional |
Directions
- In a Dutch oven, brown ground turkey, onion and carrot over medium-high heat. Drain well.
- Stir in chicken broth, barley and seasoning. Bring to a boil. Cover and simmer for 40 minutes.
- Stir in spinach and simmer for 5 minutes, to heat through. Serve with shredded Parmesan cheese, if desired.
