1 package(s) (1-lbs.) Johnsonville Italian turkey sausage
1 ½ c. white onion, chopped
2 clove(s) garlic, minced
2 c. Hy-Vee no-salt-added chicken broth
1 can(s) (10-oz.) Hy-Vee no-salt-added diced tomatoes and green chiles
½ c. evaporated skim milk
½ package(s) (16-oz.) Hy-Vee whole wheat penne pasta
½ tsp. Hy-Vee ground black pepper
1 c. Hy-Vee shredded Monterey Jack cheese, divided
Green onions , sliced, for garnish

Directions

  1. Heat olive oil in an oven-safe skillet over medium-high heat. Add sausage and onions; cook until lightly browned, about 4 minutes. Add garlic and cook until fragrant, about 30 seconds.

  2. Add broth, tomatoes, evaporated skim milk, pasta, and pepper; stir to combine. Bring to a boil, cover, and reduce heat to medium-low. Simmer until pasta is tender, about 15 minutes.

  3. Preheat broiler to HIGH. Remove skillet from heat and stir in 1/2 cup cheese. Top with remaining 1/2 cup cheese. Broil until cheese is melted and golden brown. Sprinkle with green onions, if desired.
