4 (4 oz each) salmon fillets (thawed, if frozen) | ||
2 tbsp. Hy-Vee Select olive oil, divided | ||
1 small red onion, chopped | ||
2 garlic cloves, minced | ||
¼ c. chopped sun-dried tomatoes | ||
⅓ c. fresh lemon juice | ||
2 tbsp. goat cheese |
Directions
- Preheat oven to 400 degrees. Lightly coat shallow baking dish with nonstick cooking spray. Place fish skin-side-down in baking dish. Sprinkle fish with lemon pepper; drizzle with 1 tablespoon of the olive oil; set aside.
- Heat remaining 1 tablespoon olive oil in medium skillet over medium-high heat. Add onion and garlic and sauté 5 minutes or until tender. Remove from heat and stir in sun-dried tomatoes and lemon juice. Pour over salmon.
- Bake 15 to 20 minutes or until fish flakes with fork. Sprinkle with goat cheese; bake 5 minutes more.
