    Hy-Vee salt , to taste
    Hy-Vee black pepper, to taste
    1 Roma tomato, seeded and chopped
    ½ tbsp. fresh basil leaves, chopped
    1 oz. fresh mozzarella slices, divided

    • Rimmed baking sheet
    • Hy-Vee non-stick cooking spray
    • Medium bowl

    Directions

    1. Preheat oven to 450 degrees. Spray a rimmed baking sheet with non-stick cooking spray.

    2. Place tilapia on prepared baking sheet. Season with salt and pepper.

    3. Roast 6 minutes.

    4. Meanwhile, combine tomato and basil.

    5. Top tilapia with mozzarella slices and tomato-basil mixture. Return to oven and roast another 4 minutes.
