Vanilla Berry Oatmeal

2 ½ c. uncooked old-fashioned oats, divided | ||
¼ c. walnut pieces | ||
⅓ c. packed brown sugar | ||
2 tsp. ground cinnamon, divided | ||
3 c. Westsoy vanilla soy drink | ||
½ c. dried mixed berries | ||
¼ c. Hodgson Mill milled flaxseed |
Directions
- To make topping, combine 1/2 cup oats and walnuts in medium skillet. Cook over medium-low heat 4 to 6 minutes, stirring occasionally, until both are lightly browned. Cool completely. Stir in brown sugar and 1/2 teaspoon cinnamon. Set aside.
- Bring soy drink and remaining 1 1/2 teaspoon cinnamon to a boil in medium saucepan; stir in remaining 2 cups oats and berries. Return to a boil; reduce heat to medium. Cook 5 minutes, stirring occasionally. Stir in flaxseed.
- Spoon oatmeal into five cereal bowls. Sprinkle topping over oatmeal.
