Vanilla Pear Oat Muffins

1 c. uncooked Hy-Vee old-fashioned oats | ||
1 (8 oz) container vanilla pear low-fat yogurt | ||
⅓ c. Hy-Vee margarine, melted | ||
4 Hy-Vee eggs | ||
1 tsp. Hy-Vee vanilla | ||
1 c. Hy-Vee brown sugar | ||
1 c. Hy-Vee flour | ||
1 tsp. Hy-Vee baking powder | ||
½ tsp. Hy-Vee baking soda | ||
1 tsp. Hy-Vee cinnamon |
Directions
- In a large mixing bowl, stir together oats and yogurt. Add melted butter, eggs, vanilla and brown sugar. Mix well.
- In a medium mixing bowl, sift together flour, baking powder, baking soda and cinnamon.
- Add the dry ingredients to the oat mixture and stir until combined.
- Divide batter among 16 nonstick or lightly greased muffin cups.
- Bake at 375 degrees for 22 minutes, until golden and center tests done.
- Remove from pan immediately.
