2 tbsp. cornstarch
1 ½ c. plain soymilk
1 tsp. vanilla extract

Directions

  1. Stir sugar and cornstarch together in medium saucepan. Whisk in soymilk.
  2. Cook, stirring, over moderate heat until mixture comes to a boil and thickens.
  3. Remove from heat. Stir in vanilla and pour into 3 individual serving dishes. Chill well before serving.
